Sweet Cajun Potatoes Latkes For Hanukkah and Thanksgiving All Roll into One

 Having grown up in Jewish family and know that Hanukkah will happen on Sunset in the US tomorrow. In Oz, It is already the 27th of November. I will be lighting my first candle at sunset tonight. There is a pleasure getting walloped by two holidays in row with Thanksgiving on Thursday and Hanukkah the day before. You know it means  double preparation and more fun. I went out this year to make it happen. Already ordered my turkey. I have a bowl sweet potatoes ready to peel. This dish goes back thousand of years and the ordeal of the Maccabbees warting off the Ancient Hellenistic Greek were insisting that their culture should be the rule of law. The Maccabees said "No" and fought off the Greeks and rededicated the temple in Jerusalem long before Christ arrived the on the scene.

I usually like to make my the next day at Thanksgiving especially since I am inviting friends over and my neighbors. The secret to this Cajun spice that savors that Louisiana flavor. When people come over and they always ask for more.. This pretty much a potato pancake. But, it is not. It is a sweet potato masterpiece fried in oil. The oil symbolizes the oil burnt in the temple for 8 days and there was only enough oil for one day.. These taste sweet and they are soooo good to eat. It is even more special that I can serve these puppies and get my friends on their feet. This is where the party really gets hopping.Sure enough, it does the sweetness is one that can't be missed. People will want to know your secret to them.Shhh... Don't say anything. Because I am about to let you on the secret of how to make them. So here we go with the ingredients and direction to makes these prized treasures of sweetness.


Ingredients
2 pounds sweet potatoes (about 3 large), peeled
3 large eggs
2 tablespoons plus 1 teaspoon Cajun Spice Blend
1/3 cup cilantro, chopped
Peanut oil
Sour cream or Guacamole





Directions
Using the coarse grating disc of a food processor, grate the sweet potatoes. Transfer to a large bowl.

In a small bowl, whisk the eggs. Sprinkle the Cajun spice blend into the eggs and whisk. Mix in the cilantro.

Add egg mixture to the grated potatoes.

In a large skillet, heat the peanut oil until very hot but not smoking. If you are using a thermometer, get the oil to 375°F.

Add the sweet potato mixture 1/4 cup at a time. Fry until golden, flip and fry until golden on the other side. Drain on paper towels. Repeat until all the potatoes are used.

Serve with a dollop of sour cream or a  dollop of guacamole.


Once, they are ready to come out of the frying on the plate to soak up the grease. They are ready to eat. Don't worry about what your cardiologist or primary care physician says about eating  them one time. Eating one time won't kill you.I won't say word. It is our little secret.Now, the fun part is making and giving the away to friend and collegues alike. I like to serve them to my guests at Thanksgiving this year. That is the beauty of these masterpieces of sweetness.


I like put a dollop of guacamole to go with it. Because it tastes so sweet and has all of the Louisiana and Jewish goodness cook right in. In Australia, I  make and take them over to my next door neighbors even though are not Jewish. They love them and always ask when I am going to make more. No Thanksgiving Turkey is complete Without Dressing in Oz

Whenever you have turkey for Thanksgiving in Oz, you can't forget the dressing.  I always have dressing the turkey. No Thanksgiving dinner is complete without dressing. Well,I have the perfect recipe for it. It goes really well with turkey.  My  dressing is not the traditional dressing that comes a Thanksgiving dinner. I like to be a different. My dressing has taste that is sweet to eat and to taste as well. The overall secret is ingredients and will put other bland dressings to shame.

Now, if you are wondering if this will be a hit at the thanksgiving dinner, it will definitionately be the talk at the dinner talk and possibly the neihborshood. Every person will want to know the secret of this dressing. The dressing I make is called Apple Walnut Cornbread Dressing. It will most definitely make everyone want this culinary masterpiece. Because it goes so well with turkey that your friends and family will want more. Let's go with tackle this recipe and here are the ingredients and directions.


Ingredients

    1 (9x9 inch) pan cornbread, cooled and crumbled
    1 (8 ounce) package herb-seasoned dry bread stuffing mix
    2 tablespoons chopped fresh parsley
    1/2 teaspoon ground ginger
    1/2 teaspoon salt
    3/4 cup butter
    1 cup chopped celery
    1 cup chopped onion
    2 cups chopped apples
    1/2 cup chopped walnuts
    2 cups apple juice
    3 eggs, beaten


Directions

    Preheat oven to 350 degrees F (175 degrees C). Butter a 3 quart casserole dish.
    Melt the butter in a heavy saucepan, and saute the celery and onion for 8 to 10 minutes, or until tender.
    In a large bowl, combine the cornbread, stuffing mix, parsley, ginger, and salt. Mix in the celery and onion mixture, chopped apple, chopped walnuts, apple juice, and beaten eggs. Spoon dressing into prepared casserole dish.
    Bake for 30 to 35 minutes in the preheated oven, or until heated through, and lightly browned on top.

 Now, we have the stuffing to go with our turkey on  Thanksgiving. There is nothing more Australian and American on this holiday seasoning. The dressing  speaks volume about the Thanksgiving will be sure fire hit your guests,family and friends.  You can freeze and it will still be just as good after reheating it to go with those turkey leftovers from Thanksgiving. Cooking a Thanksgiving Turkey in Oz


 


One of my favorite holiday is Thanksgiving. It is not celebrate in Australia. But, for our purposes and people who are American it is. The real purpose of this tell how to cook a turkey properly. Many people don't know how. Questions come up like what is the right temperature. How long do I cook it for. This recipe answers all of those lingering questions. So invite friends and even your Aussie neighbors next door and pass out invitations to Thanksgiving. It will be hit. I like to shop at butcher to get one just right. I place my order the week before. I want to be first the get the best bird. My butcher know me by name. He knows exactly the size bird that I want. Sure enough the bird is as big as Texas.

I like to the cooking of the Turkey with some Aussie Flair. It does work for me. The magic of what goes into cooking a bird for Thanksgiving is very easy to cook and your guests will light up with ooooooz and aaaawwws. This turkey will become very Aussie faster than a bunch of Mexican Jumping Beans with a Mariachi Band playing. It will chant Oi Oi Oi Aussie Aussie before it comes out of the oven. For this recipe let get down how to cook this wonderful bird. Here are the ingredients and directions:

 Ingredients


1   30 pound whole turkey, neck and giblets removed

    2 cups kosher salt

    1/2 cup butter, melted

    2 large onions, peeled and chopped

    4 carrots, peeled and chopped

    4 stalks celery, chopped

    2 sprigs fresh thyme

    1 bay leaf

    1 cup dry white wine


Directions


    Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot, and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight.

    Preheat oven to 350 degrees F (175 degrees C). Thoroughly rinse the turkey, and discard the brine mixture.
    Brush the turkey with 1/2 the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme, and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine.
    Roast uncovered 3 1/2 to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180 degrees F (85 degrees C). Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter. Allow the bird to stand about 30 minutes before carving.
  

Now, after cooking the turkey after 3 1/2 to 4 hours, it will be ready for  the meal. The key to cooking is do it early in the afternoon way before any guests arrive. This gives you plenty of time to get the other items that you plan on cooking for the Thanks Giving meal. The magic is this bird is made with love of family and friend to share it with. No matter where you are in the world. 

This bird is smells Aussie all way and soooo good. It is juicy and tender. It makes it a perfect honor for the male guest to do the carving. It is a tradition that I have been doing since I was a kid. But, seeing the bird and the wonderful smels and setting on the table is what give me the pleasure to do it right every year.
