Sweet Aussie Lamingtons is a Sinful Rush

There are some days where a sweet tooth can kick and takes you by the horns. No worries. Because I have the perfect little sweet desert to beat that sweet down with a wooden club. It is sweet and the name spells out very readily. It is one of those desert that can brighten up your day no matter how you are feeling. This receipe is one that just learned here recently. It tastes just wonderful.



This desert is easy and fun to make. It doesn't take long to make it. You will have fun making and sharing with friends as well as family. Because they will be begging for more of it. This Aussie tradition does speak volumes about  being Aussie. Now, you will need to following ingredients to make this slice of heaven. Here we go with the ingredients and directions.

Ingredients

1  day-old sponge cake or fresh butter cake

3 cups  granulated sugar

8  3/4  oz  of water

1/2 cup of cocoa

1  teaspoon  of vanilla extract

3 cups  coconut, desiccated

Directions

            Purchase the cake or make your own in a slab cake pan

            Cut the cake into equal size cubes   2 to 2½"

   
         Spread out the desiccated coconut on a large plate and set aside

        Mix the sugar with the cocoa in a pan. Slowly add the water until the mixture is thoroughly mixed

        Boil gently for about 12 minutes without stirring

      Remove from the heat and add the vanilla. Stir for 1 minute and then let cool slightly

       Using a fork, quickly dip the cake cubes into the chocolate mixture

  
          Roll the chocolate covered cubes in the desiccated coconut until covered as much as desired

        Place on a wire rack or a wax covered plate or flat pan so that the cake cubes do not touch either other. When completely cooled the coating will be set and the Lamingtons will be ready to eat.

Now, it tastes really good and cures the sweet tooth when it is ready to beat you down. Having this slice of Aussie sweet magic can cure blue moods and perks you right up. I like fixing a latte to go with it. It goes down real smoothly with the Lamington.  The beauty of this Aussie secret is that is perfect for any ocassion or for dinner guests. It will win them over. It is Aussie through and through.

Now, I can vouch for it and having made it. It came out just right. Friends just can't get enough of it. It goes real fast that I can't make of it. Because it goes real quick and leaving wanting more at the end. It is generally you want your fiends and family feeling after this slice of heaven.
