Frito Pie In Oz

This was my favorite growing up in Texas. I still make no matter where in the world I am. If you have been to Texas and have heard of it, it is not one dish to pass up. It is very easy to make. Now, there some slight differences but the results are good in the US or Australia. Frito pies is an easy dish to make specially on rainy day or when the weather is not so nice. If you are in Oz, you need to purchase a can of Mexican Chilli Beans from Cole's or Woolies. You need a pie pan to bake the Frito pie in the oven. I do recommend that you contact USA Foods in Melbourne and order a bag of Fritos.

USA Foods

The secret of this dish is very Texan. It is spicy. Some parts of Texas especially West Texas and pan handle of Texas hold chilli cook offs. They use the spiciest chili around. Sometimes, the cooks cook the minced hamburger in beer and cook out of all the alcohol. The chilli is awesome and says a lot about the cooks from there. They hold blue ribbon contest for the best chilli cook off. They walk away with prize as much as $10,000 for the best Chilli in Texas.

You need to purchase this from USA foods, which is a bag of Fritos.

1 small diced onion
1 bag Fritos corn chips or corn chips
3 cups shredded cheese

Directions:

1 Pre-heat oven to 350 Farenheit degrees Heat the canned chili and any optional ingredients on the stove.

2 Spread a thin layer of Fritos along the bottom of an 8x8 or 9x9 baking dish.

3 Pour about half of the heated chili evenly over the bottom layer of Fritos.

4 Completely cover the chili layer with a thicker layer of Fritos.

5 Sprinkle about half the shredded cheese atop the Fritos.

6 Pour the remainder of the chili atop the Frito/cheese layer.

7 Completely cover the top chili layer with another thick layer of Fritos, then sprinkle on the remaining cheese.

8 Bake in 350 degree Farenheit oven for about 25-30 minutes, or until bubbly around edges and top cheese is melted.

9 Allow to cool for about 5 minutes before serving.

This dish heats up again and can be served for guest at any occasion. Its magic is that is not the ordinary American dish. It is more Texan than anything else. This dish is for those love to enjoy food and can let down their guard to enjoy it every once and while. It warms the heart and soul. That is magic of this dish.
