Things are Cooking

I have not blog the last couple of days. I know that I am suppose to bu the holidays do have a way of changing that. Secondly, I am working on writing a cookbook. I am working on it right now. Writing does take time and taking bit more time with the cookbook. I am scrutinizing it bit more than the book I am ready to publish and put out to the public. Cooking is time consuming and getting the recipes on paper takes a bit more work. I am doing it. I will let everyone know when the cook book is ready. I am going to spend weekends to writing and editing it. I know will lots of re-writes before I consider it perfected. I have been busy writing the last couple days. It is going to be big when I finished. It is practically every recipe that I learned in Australia and some recipes that are not listed anywhere. I am not going publish them on the blog separately. I want it to be surprise.  It is a cornucopia of recipes from Texas and Australia. It will be good that I can say.

There will be enough in the cookbook to keep anyone busy. Get out the apron and your chef's hat.

At the same time, there will be a lots of news things are in the works. Cooking is pretty much an art and adventure. I am racing to put together and the same time. It has look over to before I put it out there to the public. Just relax and have a latte. It is about get interesting and going to kick it up a few notches.

Oi Oi Oi Aussie Chili with a Kick

When you feel down there is perfect recipe around the corner. I know of just such a recipe will inspire that get up and go. I learned one year at Chili cook off. It was given to my friend David out of San Antonio and won the Chili cook off for 4 years straight in row. This chili will definitely kill the bugs. It is spice are just wait to be savor. This recipe will  wake up you that won't fall asleep because it pure Texas. But, I change one key ingredient to make it an Aussie original. That is pure Aussie Beer. Now, we are going to cook out the alcohol. But, the spices will wake and get the party jumping like a Mariachi band ready to serenade you outside your window. The chili is great for sporting events like football in Oz or American. It is filling and can get the crowd to its feet.

Now, this chili is blue ribbon winner when I got the recipe. I made some sligh changes but it is going to be hit with the crowd to win them over. Now, let's get cracking cooking this and get your taste buds jumping to go to the party. Here is the ingredient and directions:

2 lbs. ground beef
2 (8 oz.) cans tomato sauce
1 (16 oz.) can pinto beans
2 tbsp. chili powder
1 tsp. oregano
1 tsp. salt (to taste)
1 tsp. cayenne pepper or less
1 (16 oz.) can peeled tomatoes
1  can XXXX or your favorite beer
1 sm. onion, chopped

Cook ground beef in frying pan and drain liquid. Mix beef in large pot with tomato sauce, pinto beans and chopped up can of peeled tomatoes. Add chili powder, oregano, your favorite beer or 12 ounces of water. Salt lightly to taste and add 1 small onion if desired. Simmer for 10 minutes and then carefully add cayenne pepper. One teaspoon will be quite hot so you may want to try just a little. Stir pepper in slowly and cook another 5 minutes.

This chili tastes even better the next day and you can also try different kinds of beans to get a little different flavor. You can heat up again and again. This is one of those dishes that can warm you up inside. It is secret is the spices and is pure Aussie and Texan all the way. Your guests or friends at your next sporting event will want this again and again. It is secret is that it is blue ribbon winner with guest and among friends. This is magic of Aussie and Texan mixed together. It has just the right amount of spices to get the party started. That is beauty of it and nothing is more Australian than that.

Border Crossing No Worries

Ever taken a trip that can be interesting a well as fun? Well, I knowing myself and having a flare for adventure is just that. What kind of adventure  are you on you may ask? It is one that that where getting across the border is not a problem. Unlike crossing into Mexico from Texas. It is one border where you don't have to show your passport. The I can cross back and forth doesn't require a lot of effort.Most of all, you do not have to worry about border agents or customs to get across like I did crossing between Mexico and Texas.

I had  been to Mexico and went the tourist route. I told the US border patrol one time after he asked "Are you as US citizen?" I said I am a Texan. The border agent wasn't laughing. But I showed my US passport. I always remember that experience.

When you go through Customs and Immigrantion in Australia seem to be a lot friendly than my experience in the US and the US border patrol. The Australian Immigration officers smile and ask if I was always ok. I really appreciate it.

I went to a border about 2 weeks ago on a day trip and want to capture something different. It is a border that you don't have to worry about showing your passport. I went to Tweed Heads. It is a small place that seems time forgot. But, the most interesting part of about it is has this gigantic monument showing the border.Crossing the border,No Worries. :-)

You can go to one side of the monument be in New South Wales in less than second or walk over and be in Queensland the next. I had always wondered now what happens if you have business where the state line in right in the middle of the business. It brings up one of those interesting and funny things to think about. when this monument was built.

Tweed Heads is one of those sleep towns that time forgot. It allows you to relax.  There are beach bungalows and a place to spend the day to have a picnic. I spend an incredible day out there and got very relaxed feeling being there where I could allow the wind to blow in my hair and feel the sun on my face. It is one of those feelings that you can't pass up and enjoy.
Another place I was able to capture a picture at Coolangatta was a monument dedicated to ship that wrecked in 1846 after a cyclone had hit the coast back then and the ship became ship wrecked.

This trip was well worth time and effort. It was fun and relaxing as well. Most of all, it was very peaceful. At the border monument, I was able to cross the border without any worries. This trip is so Aussie and enjoyable. I would do it again and again because the relaxing feeling that brings. Taking trips like this part of the excitement and will do more of it in the future between semesters.

Texican Aussiedelphia Sandwich

Once in a while, I look for new interesting ways to mix recipes between recipes from back in Texas and in Australia. It can make for very interesting combinations that I can come up with. Back home, I had visited often enough a restaurant called Texadelphia and had gone a lot when I was working in IT. It can make some of the best cheesesteaks that are the best that I have had. I learned the secret of how to make of these fantastic sandwiches. Having tried Aussie food, it makes sense to try to come up with things that have not been tried before.

What I came up with is very much Aussie and Texan at the same time.It is called the Texican Aussiedelphia cheesesteak sandwich. This sandwich is very filling and you won't go hungry on a empty stomach. I love making them and having friends over. My friends from Oz love love them to death. The saying is you didn't get some dripping on you that did not try enjoy it. It is messy. I will advise that just that messy,but it is enjoyable to eat. Let's just get right down to making this culinary work of genius. It is very simple to make.

 Ingredients
1 whole Large (or 2 Small) Onions 
2 sticks Butter (lots And Lots Of Butter) 
2 pounds (to 3 Pounds) Cube Steak (tenderized Round Steak That's Been Extra Tenderized) 
Lawry's Seasoned Salt (or Similar Seasoned Salt) 
1/2 cup (approximately) Worcestershire Sauce 
1 of can of canned beets
Tabasco Sauce, To Taste 
4 whole French/deli Rolls
1 egg
3 slices of cheedar cheese

Directions

Instructions

 

Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.

Slice cube steak against the grain. Season with Lawry’s.

Heat 2 tablespoons butter over high heat (in same skillet) until melted and beginning to brown. Add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides.

Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 tablespoons butter.

Add cooked onions. Stir to combine.

Slice up into slices the canned beets into thin slices.

For the egg, we are going to fry it in a separate frying pan coated with nonstick coating like butter spray.

 You fried the egg on both sides until it looks right.

Butter halved French rolls and brown in skillet.

 You want to slice the buns in half along the side.
and toast it in the oven until it looks golden brown.

 Then, take the 3 slices of cheese and place them on one of the buns that is brown until all of the slices are melted. 

Then, removed the bun where the cheese is melted and place on a plate.

 You place the fried egg on the bun with the melt cheese along a slice of canned beets. 

On the other slice bun place on the place next to the other bun with other ingredients are. 

You put the meat on the slice toasted without the other ingredients and along with spoons of the juices from the pan where the meat was cooked and pour gently on bun with meat on it.

The magic of this sandwich is perfect for those get togethers or the football game in the US like the Superbowl or any type of sporting event. In Oz, it is perfect for the Rugby match like State of Origin or any type sporting event. It is a real winner with the crowd. Its magic is the taste of goodness. It is Aussie and Texan all round into one. That is the beauty of this sandwich. It the type of sandwich that can win people over. It is filling and leaves you feeling satisfied. You will feel full afterwards. Hopely, you didn't any of it on you,but I can't guarantee it. It is the sandwich that speaks volumes of creativity and taste of goodness. It is an original and true blue.

The Weekly FX Report using Texas Trading System

Good Afternoon or Good Morning to where ever you are in the world. This is the weekly Forex Reporting for the coming week of 17-11-2013 to 22-11-2013. I am using a trading system that built from scratch and have used for many years called the Texas Trade. It is a combination of Rob Booker, Dale Pinkert "aka Stop Loss Hunter"and Marc Walton of Forex Mentor Pro along with my own stuff. It is based on slower and global macro view the markets over a longer time frame.I am using longer term charts for this and requires a bit more patience. Before I put out the report for this week. Anyway, now that is out of the way. The sole pairs that I like to trade are AUD ,NZD and CAD pairs. I am not focusing the EUR or GBP because they are not my favorites. In Today's report we are going to focus on the AUD/USD and the NZD/USD. At the moment I am looking at the  AUD/USD currency pair using a daily chart.











The Aussie has recently fallen to 0.9368. I believe this pair is going to head lower. Some of the reports coming out China have been good while some of the reports out of Australia were not good. Also, the Yellen confirmation has not helped the pair when it would normally. We would of seen this trend a bit higher. There are signs that RBA may not be too quick ramp up interest rates just yet. I still believe that it could to 0.9178 as support level.  The rumors of taper chattering in the background from speculation. I am not going to be in the camp of saying if they are or aren't I rather trade on facts rather than rumor. I think it could go lower and waiting to see if does go there. I believe it will.

Now, on to the kiwi, I believe this will head lower as well. We still have the head and shoulders pattern on it. This pattern is still play I believe. I believe that recent activity with the Yellen testimony and have it leaked did not stop the overall downward pressure on the pair. It will head lower. Because there is not really general change in direction of trend.  Right now, the Kiwi is expensive. Comments by Governor Wheeler indicate that he would like to see a lower kiwi before interest rates are raised.







I believe a lot will find out a bit more as the week progress with both pairs.I believe confirmation hearing will tell where the direction is going with regard to the dollar. I am very skeptical because S & P 500 looks very bubble like many reason. It looks like the market has not price in the taper yet. We will have to wait and see. I am going not be doing a lot buying at this point and being more cautious than anything. I will put out report weekly rather daily because I look to look at things from global macro view of currency markets and being able to anticipate when a black swan type can manifest itself. I am a using cycle indicator that I built from scratch because I not please with the ones that are out there. It can tell what is happening. I will put out another report next Sunday. We see what happens in the markets this week.
